Megumi  Odin

Executive Vegan Chef  / President


My name is Megumi and I was born in Tokyo, Japan. In Tokyo I was a professional food stylist who designed elegant meal settings for magazines, television programs, films, and other productions. In Hawaii I founded Peace Café, the first vegan restaurant in Honolulu. Then I sold Peace Café and started Satori, a pop up restaurant at the Soto Mission Zen temple, serving up authentic “Shojin Ryori”  Zen–style  vegan meals in the wabi tradition of minimalism inspired by the Japanese aesthetics of beauty as graceful simplicity. Also, I started Green Garden vegan food truck service in the sustainability court on the campus of the University of Hawaii at Manoa. On March 6, 2017 I opened a new upscale restaurant called Vegan Hills.

My original vegan recipes are inspired from travelling all over the world to taste the cuisine of different cultures, such as Italy, France, Vietnam, Indonesia, Korea, and India as well as Japan. Also, my soul is always travelling to many countries. I receive heavenly inspiration from above guiding me to prepare magical new creations for my family, my friends and my customers! My mission is to spread the vegan lifestyle everywhere. The vegan lifestyle is a simple, easy and natural way to maintain the health of our body, the welfare of animals, and the conservation of nature. I hope that through my vegan dishes everyone can get a taste of nirvana! Please everyone travel with me to new countries by our Vegan Hills’ airline.




Head Chef


Born in Kanagawa Prefecture, Japan.  My love of food started early.  By the time I was in High School, I was committed to saving up money from part time jobs to explore restaurants that peaked my interest around town.  Inspired, I’d get home, and enjoyed recreating dishes in my own kitchen.  At 18, I started working at an American Diner in Yokohama (TGI Fridays), and thereafter, worked an array of restaurant and bar jobs, ranging from American themed bars to cross culture and multi-ethnic restaurants to help build my culinary foundation.  A fated encounter with Megumi Odin in Hawaii, in 2010, led to me working for her at Peace Café, and this was the beginning of my journey with Vegan cuisine and Veganism.  A few years later, I started working as an Executive Sous Chef at bills restaurant in Waikiki, and under world renowned chef, Bill Granger, and his global team of chefs, I had the opportunity to explore the cuisines and techniques from around the world, while taking in the unique inspirations hailing from Sydney, Australia.

Growing up around Shojin-Ryori, I have always harbored a deep interest and appreciation in Veganism.  Along with sex and sleep, eating is a human being’s top 3 desires in life.  What we eat and how we eat can dictate how we feel, physically, emotionally, and even spiritually. Thus, food, truly, is a choice we make on how we want to live our lives.  Through my work at Vegan Hills, my hope is to explore, inspire, and provide food that is good for our bodies, our souls, and the environment, while helping to spread the beauty and benefits of a Vegan Lifestyle.

Aloha My name is Solomon Ka'ili Ka'imimoku IV and I have pursued many interests in my professional career, but I have always felt the most at home in the food and beverage industry.


I have achieved a Bacholrs degree in Hawaiian Studies and in Travel industry management from the University of Hawai'i at Manoa. I started my career at a little bistro on the island of Hawaii in 2000 as a server and worked my way up to General Manager after only two years. Most recently I held the position of corporate trainer for The Cheeseburger Company.


I have a passion for food and service and I intend on bringing my passions along with my hospitality management experience to the Vegan Hills 'Ohana and all of our guests.


Whether I am making dinner for my family, making music or building something for my son, I truly enjoy creating and transforming ideas into something unique and unforgettable.

I was born and raised in Phoenix, Arizona. I'm new to the Hawaiian islands. Traveling, art, music, adventuring, hiking and meeting new people are a few of the things that drive me in life. I'm an empath at heart, and I love to spread kindness, compassion and acceptance in all things I do. Love and understanding of all living things bleeds inside me. Also, I may or may not receive my intuitive knowledge from the ocean and I can speak to dogs.

Hi, I'm Kellee!  A lover of this earth and all it's inhabitants.  I enjoy singing, eating, and binge watching Doctor Who for the 7th time.  I have been told that I am the songbird of my generation, that my voice is like a combination of Fergie and Jesus.  I hope to run a vegan restaurant myself when I grow up. One day I hope to be rich and famous so I can hire Megumi as my personal chef.

I enjoy living a cruelty free lifestyle, nourishing my body with healthy food and protecting the environment, that is why I chose to be a vegan.

After watching some vegan documentaries, I realized it was the right thing to do for my health, for the animals, and for the environment. Working at Vegan Hills gave me the opportunity to practice what I believe and to meet wonderful people while serving nourishing food to people..




Aloha! My name is Kristin. I am originally from the Bay Area, California; however moved to Oahu to attend UH Manoa. I am currently a senior and getting my BS in natural resources and environmental management. Environmental conservation and sustainability are my passions and the areas that I hope to be involved in after I graduate! I enjoy hiking, traveling, hammocking, vegan donuts, and going to the beach!





"Aloha my name is Miranda! Originally from Colorado, I moved to Hawaii for school. I am completing my bachelors in social work and minor in women's studies. About 2 years ago I became aware of the unsustainable impacts my eating habits were having on the environment and on other defenseless life. I began removing all animal products and opting for as many local, environmentally friendly products as possible, creating a new lifestyle full of intentional habits. We are all changemakers! We can create a harmonious world. Now as a vegan, ecofeminist, and social justice advocate leading by example is how I embody my conviction and set change in motion every, single, day. Every day is a new day that we can do our best to prevent suffering: of ourselves, of others, of animals and of the environment! Eating can be compassionate, empathetic, and wholesomely nutritious in every way! It can be as simple as choosing to embrace one plant-based meal a day. (Even dessert!) I love everything on our menu, it's simply a matter of what I'm in the mood for. My name is Danielle and I’m super excited to join the Vegan Hills loving family! I began my vegan journey about a year ago and it’s been one of the most fulfilling life choices I’ve made so far (aside from following my sister Kellee’s lead and taking the leap to move to Hawaii during a particularly rough New England winter!). I enjoy singing, dancing, painting and creating fun cocktails. I look forward to growing and learning within the vegan community and seeing where this amazing journey takes me from here!




I was born and raised on O'ahu and have preferred a vegetarian diet for most my life. Naturally, as veganism became more popular, I further educated myself on the realities of the meat, egg, and dairy industries and the impact they have on our environment. It was a no brainer for me, and I have been following a vegan lifestyle for 2 years now. I am so grateful to have found Vegan Hills, it is not only a workplace, but a community of like-minded people. It's an honor to be a part of the Vegan Hills Ohana, we love nourishing you and your loved ones with plant-based deliciousness!






My name is Karina, I moved from California out of no where and landed on this beautiful island of Oahu about a year and a half ago . I was raised in Connecticut with Colombian parents so it was a little hard trying to be vegan living at home. I have now freshly started my new vegan journey about 9 months ago and it has been amazing and way easier than when I first tried about 5 years ago. Vegan hills has also changed my life and made me a way happier vegan . My favorite dish at Vegan Hills is the Nirvana bowl! It’s full of protein and a whole bunch of goodness for the body and soul.
